BBQ chicken and bacon zucchini flowers

Barbecued Chicken and Bacon Zucchini Flowers

serves 3

1 chicken breast
1 egg white
2 tablespoons chilli sauce
¼ bunch coriander
3 bacon rashers
100g fresh thin egg noodles
¼ red capsicum
2 spring onions
zest of ½ lemon

Slice chicken breast in half and finely chop one half like mince (this can be done in a food processor). Place mince in a bowl and with a spatula slowly stir in egg white. Cube the rest of the chicken into 5mm pieces and mix into the minced chicken. Add chilli sauce, coriander and salt and pepper. Stuff mixture into the flowers and then wrap the flower with a strip of bacon using a tooth pick to hold in place. Cook the flower on a barbecue grill on medium heat. Finely slice the capsicum and spring onion and combine with cooked noodles and lemon zest. Arrange noodles on a plate accompanied with the barbecued zucchini flowers.
